Ingredients
Pancake Batter
- ¾ cup milk
- 1 ½ tablespoons vinegar
- 1 cup flour
- 3 tablespoons sugar
- 1 teaspoon cinnamon (optional extra ½ teaspoon for more cinnamon flavor)
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- 1 egg
- 2 tablespoons oil
Apple Topping
- 2 tablespoons butter
- 2 apples, peeled, cored, and diced
- 2 tablespoons brown sugar
- ½ teaspoon cinnamon
- ⅓ cup maple syrup
Instructions
- Preheat Skillet: Preheat a skillet to medium-high heat, approximately 275 degrees Fahrenheit, to prepare for cooking the pancakes.
- Prepare Buttermilk: Whisk the milk and vinegar together in a small bowl and allow to rest for 5 minutes to curdle and mimic buttermilk.
- Mix Dry Ingredients: In a large bowl, whisk together the flour, sugar, cinnamon, baking powder, baking soda, and salt until thoroughly combined.
- Combine Wet Ingredients: Whisk the egg and oil into the curdled milk mixture. Add the wet ingredients to the dry ingredients and stir just until combined; the batter should still have some lumps to avoid overmixing.
- Cook Pancakes: Spray the preheated skillet with cooking spray. Using a ¼ cup measure, pour batter onto skillet. Cook for about 2 minutes until bubbles form on the surface and edges begin to look dry. Flip with a spatula and cook an additional 1-2 minutes until golden and cooked through. Repeat with remaining batter and set pancakes aside.
- Prepare Apple Topping: In a medium saucepan, melt butter over medium heat. Add diced apples, brown sugar, and cinnamon, stirring occasionally for 3-5 minutes until apples are very tender.
- Finish and Serve: Stir maple syrup into the apple mixture. Serve the warm apple topping over the freshly cooked pancakes immediately for best flavor.
