Description

A quick and flavorful 10-minute peanut sauce rice noodles recipe that’s perfect for a light lunch or dinner. This dish features tender rice noodles tossed in a creamy, spicy peanut sauce made with simple ingredients. Ready in minutes, it’s ideal for those craving a savory, Asian-inspired meal with minimal effort.

Ingredients

Noodles

  • 150 grams rice noodles (or any kind of noodles)
  • Salt (optional)

Peanut Sauce

  • 4 tbsp peanut butter (crunchy or creamy)
  • 2 small cloves of garlic
  • 1 tbsp light soy sauce
  • 1 tbsp sriracha (or any spicy sauce; reduce to 1/2 tbsp if less spicy preferred)
  • 1/2 tbsp lemon juice
  • 1 tbsp honey (or maple syrup or 1/2 tbsp sugar)
  • 5 tbsp water
  • 1/2 tbsp sesame oil (optional but recommended)

Garnishes

  • Sesame seeds
  • Spring onions
  • Crushed peanuts

Instructions

  1. Boil Noodles: Cook the rice noodles according to the package instructions, adding salt if desired. Drain and set aside.
  2. Prepare Sauce: While noodles boil, combine peanut butter, garlic cloves, light soy sauce, sriracha, lemon juice, honey, water, and sesame oil in a blender. Blend thoroughly until the sauce is smooth and creamy.
  3. Toss and Serve: Pour the peanut sauce over the cooked noodles and mix well to coat evenly. Serve at room temperature or chilled, or warm them by cooking the coated noodles on medium flame for 1-2 minutes. Add water if the sauce is too thick. Garnish with sesame seeds, chopped spring onions, and crushed peanuts before serving.

Notes

  • You can adjust the spiciness by varying the amount of sriracha.
  • If you prefer vegan options, substitute honey with maple syrup.
  • Adding sesame oil enhances the nutty flavor, but it’s optional.
  • This dish is great served warm, room temperature, or cold.
  • Use crunchy or creamy peanut butter according to your texture preference.
