Ingredients

Dry Ingredients

  • 1 2/3 cups (217g) all-purpose flour (measured correctly)

Wet Ingredients

  • 3/4 cup (168g) unsalted butter, melted
  • 1 1/2 cups (337g) packed light brown sugar
  • 2 large eggs
  • 2 teaspoons vanilla paste

  • 1 1/2 cups (253g) white chocolate chips


Instructions

  1. Preheat and Prepare Pan: Preheat your oven to 350°F. Grease an 8-inch square metal baking pan (avoid glass or ceramic pans), then line it with parchment paper, leaving extra hanging over two sides to easily lift the blondies out later.
  2. Mix Dry Ingredients: In a medium bowl, combine the flour, baking powder, and salt. Stir together and set aside.
  3. Combine Butter and Sugar: In a large bowl, whisk the melted butter and light brown sugar together until thoroughly mixed. Let the mixture cool until it is just warm to the touch.
  4. Add Eggs and Vanilla: Add the eggs and vanilla paste to the butter and sugar mixture. Whisk vigorously for 20-30 seconds until the batter is smooth and well combined.
  5. Incorporate Dry Ingredients and Chocolate Chips: Gently fold the dry ingredients into the wet mixture until just combined. Then fold in the white chocolate chips evenly throughout the batter.
  6. Pour and Bake: Pour the batter into the prepared pan and spread it evenly. Bake in the preheated oven for 25-30 minutes until the edges turn lightly golden and the center still jiggles slightly when moved.
  7. Cool and Serve: Remove from oven and allow the blondies to cool completely in the pan. Use the parchment paper overhang to lift the blondies out, then cut into 12 squares. Store in an airtight container at room temperature, best consumed within 4-5 days.
