Description
Delicious and refreshing strawberry yogurt clusters dipped in a rich dark chocolate shell make for a perfect summer treat that combines creamy yogurt, juicy strawberries, and decadent chocolate.
Ingredients
Main Ingredients
- 1 & 1/4 cup strawberries, diced
- 1 cup plain Greek yogurt
- 2-3 tbsp honey (to taste)
- 1 tsp vanilla extract (optional)
Chocolate Coating
- 1 & 1/2 cup dark chocolate chips or chunks (can also use milk chocolate or semi-sweet chocolate)
- 1 tbsp coconut oil
- Sea salt (for topping, optional)
Instructions
- Prepare Freezing Surface: Line a baking sheet that fits into your freezer with parchment paper or a silicone mat and set it aside to prepare for the clusters.
- Mix Ingredients: In a bowl, combine the diced strawberries, Greek yogurt, honey, and vanilla extract. Stir until all ingredients are fully incorporated and you have a consistent mixture.
- Form Clusters and Freeze: Drop 2-3 tablespoons of the strawberry yogurt mixture onto the prepared baking sheet, spacing them apart. Place the sheet in the freezer and freeze the clusters for 30-60 minutes, or until they are solid.
- Melt Chocolate: Once clusters are frozen, melt the dark chocolate chips and coconut oil together in a microwave-safe bowl. Heat in 30-second increments, stirring thoroughly between each increment until the chocolate is smooth and fully melted.
- Dip Clusters in Chocolate: Remove the frozen clusters from the freezer and dip each cluster into the melted chocolate, fully coating both sides. Place the dipped clusters back onto the baking sheet.
- Optional Sea Salt Topping: Sprinkle a pinch of sea salt on top of each chocolate-covered cluster if desired for a contrasting flavor.
- Final Freeze to Set: Return the clusters to the freezer for 10-30 minutes until the chocolate coating hardens and sets.
- Storage: Store the clusters in the refrigerator for a softer texture or keep them in the freezer for a firmer, ice cream-like consistency.
Notes
- Using coconut oil helps the chocolate melt more smoothly and gives a nice glossy finish.
- You can substitute dark chocolate with milk or semi-sweet chocolate based on preference.
- The vanilla extract is optional but adds extra flavor depth to the strawberry yogurt mixture.
- For a less sweet option, adjust the honey quantity to your taste or omit it entirely.
- These clusters can be stored in an airtight container for up to one week in the fridge or longer in the freezer.
- Be careful not to let the chocolate cool too much before dipping to ensure even coating.
- Sprinkling sea salt is optional but highly recommended for a delicious sweet-salty contrast.
