Instructions
- Prepare Chickpeas and Melt Chocolate: Drain and rinse one can of chickpeas thoroughly. Melt 1 cup of vegan dark chocolate chips either in the microwave or on the stovetop using a double boiler until smooth.
- Blend Ingredients: Add the rinsed chickpeas, 1/2 cup of your chosen nut or seed butter, and the melted 1 cup of dark chocolate chips into a food processor or blender. Blend for 45-60 seconds or until the mixture is smooth and fully incorporated.
- Scoop and Freeze: Using a cookie scoop, portion the batter onto a baking sheet lined with parchment paper. Place the baking sheet in the freezer for 15-20 minutes to allow the chickpea balls to harden slightly.
- Shape the Truffles: Remove the semi-frozen balls from the freezer and roll each portion into smooth, even balls with your hands. Return them to the freezer for an additional 10 minutes to firm up further.
- Melt Coating Chocolate: While the truffles chill, melt the additional 1 cup of vegan dark chocolate chips with 1 tablespoon of coconut oil until fully smooth and ready for dipping.
- Coat the Truffles: Take the truffles out of the freezer and dip each ball into the melted chocolate coating, ensuring they are well covered. Optionally, sprinkle your choice of toppings such as cacao nibs, goji berries, or shredded coconut while the coating is still wet.
- Final Chill: Place the coated truffles back on the parchment-lined baking sheet and freeze until the chocolate hardens completely, about 15-20 minutes.
