Lentil Taco Filling

To Serve
- 8 medium tortillas

Instructions
- Combine Ingredients: Place the lentils, vegetable broth, chopped onion, salsa, olive or avocado oil, ground cumin, dried oregano, paprika, dried parsley, apple cider vinegar, coconut aminos, and salt into your slow cooker. Stir the mixture a few times to evenly distribute all ingredients, then cover with the lid.
- Slow Cook Lentils: Cook the mixture on HIGH for 3-4 hours or on LOW for 7-8 hours, depending on your slow cooker. The lentils are done when they are tender and most of the liquid has evaporated. Cooking times may vary slightly based on the appliance.
