Description

This vegan protein pizza is a quick and easy single serving meal packed with 40g of plant-based protein. Featuring a homemade vital wheat gluten crust topped with tomato sauce and vegan mozzarella, it’s perfect for a healthy and satisfying dinner ready in just 30 minutes.


Ingredients

Dry Ingredients

  • ¼ cup + 2 teaspoons vital wheat gluten
  • ¼ cup + 1 teaspoon all purpose or bread flour
  • ¼ teaspoon salt
  • 1 teaspoon baking powder
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • 1 tablespoon nutritional yeast

Wet Ingredients

  • 1 teaspoon apple cider vinegar
  • ½ cup water

Toppings

  • ¼ cup tomato or marinara sauce (Rao’s recommended)
  • ¼ cup vegan mozzarella (Follow Your Heart recommended)


Instructions

  1. Preheat Oven: Preheat your oven to 425°F (218°C) so it’s ready once your dough is prepared.
  2. Mix Dry Ingredients: In a medium-sized bowl, whisk together vital wheat gluten, flour, baking powder, salt, onion powder, garlic powder, and nutritional yeast until well combined.
  3. Add Wet Ingredients: Pour in the water and apple cider vinegar, stirring the mixture until a wet dough forms.
  4. Shape Dough: Lightly grease an eighth sheet pan and transfer the dough onto it. Using the back of a spoon, spread the dough evenly; it will be thin and may have small holes, which are fine. Optionally, spread on a larger sheet pan to form a circle if preferred.
  5. Par-Bake the Crust: Bake the crust in the preheated oven for 5 minutes to set the dough.
  6. Add Toppings and Finish Baking: Remove the crust from the oven, spread the tomato or marinara sauce evenly over the surface, then sprinkle the vegan mozzarella cheese on top. Return to the oven and bake for an additional 15 minutes at 425°F (218°C) until cheese is melted and crust is cooked through.

Notes

  • The dough will be quite thin and may have holes; this is normal and helps achieve a crisp crust.
  • Using an eighth sheet pan works best for shaping and baking, but you can use a larger pan if you want a round pizza.
  • Vital wheat gluten is key to the high protein content in this crust.
