Description

This hearty Turkey Mushroom Shepherd’s Pie is a quick and comforting 30-minute dinner made with seasoned ground turkey, mushrooms, peas, and carrots in a savory gravy, topped with creamy mashed potatoes and broiled to golden perfection.


Ingredients

  • 2 lbs. potatoes, peeled & cubed
  • 2 tbsp sour cream
  • 1 large egg yolk
  • 1/2 cup half and half
  • Salt and pepper, to taste
  • 1 lb. ground turkey
  • 1/2 onion, diced
  • 8 oz. mushrooms, sliced
  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • 1 cup low-sodium beef broth
  • 2 tsp Worcestershire sauce
  • 1 cup frozen peas and carrots
  • 1 tsp sweet paprika
  • 1 tsp parsley, chopped

Instructions

  1. Boil the potatoes in a pot of lightly salted water until fork tender. Drain and mash with sour cream, egg yolk, half and half, and salt and pepper to taste. Set aside.
  2. In a large skillet, brown the ground turkey and onions over medium heat, breaking up the meat (about 3 minutes).
  3. Add mushrooms to the skillet and cook for an additional 5 minutes until softened and turkey is fully cooked.
  4. In a small skillet, melt butter over medium heat. Whisk in flour until smooth. Gradually add beef broth and Worcestershire sauce, whisking constantly until the mixture is slightly thickened.
  5. Pour the gravy into the turkey and mushroom mixture and stir to combine.
  6. Add frozen peas and carrots to the skillet and cook until heated through. Transfer the mixture to a 2-quart casserole dish and spread evenly.
  7. Top with the mashed potatoes, smoothing into an even layer. Sprinkle with paprika.
  8. Broil for 3–5 minutes or until the top is lightly golden. Garnish with chopped parsley and serve warm.

Notes

  • Use Yukon Gold or Russet potatoes for the creamiest mashed topping.
  • You can prepare the mashed potatoes in advance for quicker assembly.
  • Substitute ground turkey with chicken or beef if preferred.
  • To save time, use store-bought mashed potatoes or pre-cooked frozen mashed potatoes.
