Description
This hearty Turkey Mushroom Shepherd’s Pie is a quick and comforting 30-minute dinner made with seasoned ground turkey, mushrooms, peas, and carrots in a savory gravy, topped with creamy mashed potatoes and broiled to golden perfection.
Ingredients
- 2 lbs. potatoes, peeled & cubed
- 2 tbsp sour cream
- 1 large egg yolk
- 1/2 cup half and half
- Salt and pepper, to taste
- 1 lb. ground turkey
- 1/2 onion, diced
- 8 oz. mushrooms, sliced
- 2 tbsp butter
- 2 tbsp all-purpose flour
- 1 cup low-sodium beef broth
- 2 tsp Worcestershire sauce
- 1 cup frozen peas and carrots
- 1 tsp sweet paprika
- 1 tsp parsley, chopped
Instructions
- Boil the potatoes in a pot of lightly salted water until fork tender. Drain and mash with sour cream, egg yolk, half and half, and salt and pepper to taste. Set aside.
- In a large skillet, brown the ground turkey and onions over medium heat, breaking up the meat (about 3 minutes).
- Add mushrooms to the skillet and cook for an additional 5 minutes until softened and turkey is fully cooked.
- In a small skillet, melt butter over medium heat. Whisk in flour until smooth. Gradually add beef broth and Worcestershire sauce, whisking constantly until the mixture is slightly thickened.
- Pour the gravy into the turkey and mushroom mixture and stir to combine.
- Add frozen peas and carrots to the skillet and cook until heated through. Transfer the mixture to a 2-quart casserole dish and spread evenly.
- Top with the mashed potatoes, smoothing into an even layer. Sprinkle with paprika.
- Broil for 3–5 minutes or until the top is lightly golden. Garnish with chopped parsley and serve warm.
Notes
- Use Yukon Gold or Russet potatoes for the creamiest mashed topping.
- You can prepare the mashed potatoes in advance for quicker assembly.
- Substitute ground turkey with chicken or beef if preferred.
- To save time, use store-bought mashed potatoes or pre-cooked frozen mashed potatoes.
