Ingredients
Fish
- 1 lb tilapia fillets
- 3 tbsp butter
- salt and pepper to taste
Sauce
- 1 medium onion, diced
- 2 garlic cloves, minced
- 6 oz roasted peppers, chopped
- 6 oz roasted peppers, pureed
- ¾ cup heavy cream
- ½ cup grated Parmesan cheese
Garnish
- chopped parsley
- additional grated Parmesan cheese
Instructions
- Cook the Fish: Melt 2 tablespoons of butter in a large non-stick skillet over medium heat. Season the tilapia fillets with salt and pepper, then fry them for 3 to 4 minutes on each side until cooked through and lightly golden. Remove the fish from the skillet and set aside.
- Sauté Onion: In the same skillet, add the remaining 1 tablespoon of butter. Add the diced onion and sauté for about 5 minutes until softened and translucent.
- Add Garlic and Roasted Peppers: Stir in the minced garlic, chopped roasted peppers, and pureed roasted peppers. Continue to cook for another 5 minutes to blend the flavors and slightly reduce the sauce.
- Finish the Sauce: Pour in the heavy cream and add the grated Parmesan cheese. Turn off the heat and stir the sauce well. Taste and adjust the seasoning with salt if needed.
- Combine Fish and Sauce: Return the cooked tilapia fillets to the pan, spoon the roasted pepper sauce over them, and let the flavors meld for a minute or two over very low heat (or briefly covered, off the heat).
- Garnish and Serve: Garnish the dish with freshly chopped parsley and a sprinkle of grated Parmesan cheese before serving.

- You can use store-bought roasted peppers or roast your own by charring bell peppers under a broiler or on a grill until the skin blisters, then peeling and chopping/pureeing them.
