Ingredients
2/3 cup vegan butter
1 1/2 bags vegan marshmallows
6 1/2 cups rice crisps (or rice cereal)
1/2 tsp vanilla extract
Instructions
- In a medium-large pan, melt the vegan butter over medium-low heat. Stir occasionally to ensure it doesn’t burn.
- Once the butter is melted, add the vegan marshmallows to the pan. Stir constantly until the marshmallows are fully melted and incorporated with the butter. This step can take a bit longer because vegan marshmallows tend to be clumpy and don’t melt as easily as regular marshmallows.
- Turn off the heat and stir in the vanilla extract, ensuring it’s well mixed.
- Fold in the rice crisps with a spatula. If needed, use your hands to ensure the rice crisps are evenly coated with the marshmallow mixture.
- Spoon the mixture into a 9×9-inch pan for thick rice krispie treats, or a 9×13-inch pan for thinner squares. Press the mixture down lightly with your hands or a spatula. Be careful not to press too hard, as that can make the treats too dense.
- Place the pan in the fridge for about 1 hour to allow the treats to set and firm up.
- Once the treats are set, cut them into squares and enjoy!

- Feel free to mix in extras like chocolate chips, dried fruit, or nuts for added texture and flavor.
- Add almond extract or cinnamon to the marshmallow mixture for a unique flavor twist.
