Description

These Vegan Rice Krispie Treats are a nostalgic snack made with simple plant-based ingredients. With vegan butter and marshmallows, they’re gooey, chewy, and completely dairy-free – perfect for a quick dessert or a fun treat for all ages.


Ingredients

2/3 cup vegan butter

1 1/2 bags vegan marshmallows

6 1/2 cups rice crisps (or rice cereal)

1/2 tsp vanilla extract


Instructions

  1. In a medium-large pan, melt the vegan butter over medium-low heat. Stir occasionally to ensure it doesn’t burn.
  2. Once the butter is melted, add the vegan marshmallows to the pan. Stir constantly until the marshmallows are fully melted and incorporated with the butter. This step can take a bit longer because vegan marshmallows tend to be clumpy and don’t melt as easily as regular marshmallows.
  3. Turn off the heat and stir in the vanilla extract, ensuring it’s well mixed.
  4. Fold in the rice crisps with a spatula. If needed, use your hands to ensure the rice crisps are evenly coated with the marshmallow mixture.
  5. Spoon the mixture into a 9×9-inch pan for thick rice krispie treats, or a 9×13-inch pan for thinner squares. Press the mixture down lightly with your hands or a spatula. Be careful not to press too hard, as that can make the treats too dense.
  6. Place the pan in the fridge for about 1 hour to allow the treats to set and firm up.
  7. Once the treats are set, cut them into squares and enjoy!
