This Sweet Potato Gnocchi recipe offers a delightful twist on traditional gnocchi by incorporating roasted sweet potatoes for a naturally sweet and tender dough. Gnocchi Dough
- 2 Sweet Potatoes (680-700g)
- 180g Plain White Flour (roughly 1 ½ cups), plus more for dusting; gluten-free flour can be used
- Pinch of Salt (optional)
Instructions
- Prepare Sweet Potatoes: Preheat your oven to 180°C (360°F). Prick the sweet potatoes with a fork and place them on a baking dish. Bake for 60 minutes, turning halfway at 30 minutes. Alternatively, microwave each potato for 8 minutes if preferred.
- Mash the Sweet Potatoes: Remove the sweet potatoes from the oven and allow them to cool slightly. Carefully peel off the skins and place the flesh in a bowl. Mash thoroughly with a fork until smooth and let it cool for about 10 minutes.
- Make the Dough: Gradually add the 180g of plain flour to the mashed sweet potatoes and knead gently by hand to form a dough. If needed, add more flour to prevent sticking.
- Shape the Gnocchi: Transfer the dough to a floured work surface and form it into a ball. Divide the ball into 4 equal parts. Flatten each part into a flatbread shape about ½ inch thick. Cut into small pieces and roll each piece between your hands to form classic gnocchi shapes.
- Cook the Gnocchi: Bring a large pot of salted water to a boil. Add gnocchi in batches, giving them space to cook. Boil until they float to the surface, about 2–3 minutes.
- Drain and Dry: Remove the cooked gnocchi with a slotted spoon and place them in a bowl lined with kitchen paper to absorb any excess moisture.
- Optional Frying: For a crispy finish, fry the gnocchi in a pan with butter or olive oil until golden and crispy on the outside. Alternatively, add them directly to your favorite pasta sauce and serve.
