  • 1 medium sweet potato, peeled and cut into chunks (about 3 cups shredded)
  • 1/2 red onion
  • 2 (15 ounce) cans black beans, drained and rinsed, divided
  • 2 chipotle peppers in adobo
  • 1 tablespoon adobo sauce
  • 1 tablespoon avocado oil

  • 1/2 cup rolled oats
  • 1/4 cup ground flax seed
  • 1 1/2 teaspoon garlic powder
  • 1 1/2 teaspoon ground cumin
  • 3/4 teaspoon kosher salt

  • Red onion slices
  • Lettuce
  • Avocado slices


Instructions

  1. Prep: Preheat your oven to 400°F (204°C) and grease or line a baking sheet with parchment paper to prevent sticking.
  2. Grate the Vegetables: Using a food processor with a grating disc, grate the sweet potato and the red onion after cutting them into large chunks. Alternatively, you can grate them by hand with a box grater. Set the grated mixture aside.
  3. Prepare Dry Ingredients: Replace the grating disc with the standard S-blade in the food processor. Add rolled oats, ground flax seed, garlic powder, cumin, and kosher salt. Process for 30 to 45 seconds until a fine flour forms.
  4. Make a Paste: Add one can of the drained black beans, chipotle peppers, adobo sauce, and avocado oil to the food processor. Blend until a thick paste forms, about 1 minute, scraping down the sides as needed.
  5. Combine Mixtures: Add the shredded sweet potato and onion mixture along with the remaining can of black beans to the food processor. Pulse until the mixture is mostly combined and sticks together. Use a spatula to mix as needed.
  6. Form Patties: With slightly damp hands, portion the mixture into eight even patties using a 1/2 cup measure. Flatten and smooth out each patty, then place them on the prepared baking sheet.
  7. Bake: Bake the patties in the middle rack of the preheated oven for 20 minutes. Flip the patties and move the baking sheet to the top rack, baking for an additional 15 to 20 minutes. Remove from the oven and let the patties rest on the baking sheet for 5 to 10 minutes to firm up.
  8. Serve & Store: Serve the patties warm on toasted burger buns with chipotle mayo, lettuce, red onion, and avocado slices. Store leftovers in the refrigerator for up to 5 days or freeze for up to 2 months. Reheat in the microwave, toaster oven, or on the stovetop before serving.

Notes

  • To help the patties hold together better, make sure your hands are slightly damp when forming them.
  • If you prefer less spice, reduce the quantity of chipotle peppers or adobo sauce.
  • These burgers freeze well; freeze on a baking sheet first then transfer to a container to prevent sticking.
