Description

These Strawberry Bliss Balls are a delightful and healthy snack made from fresh strawberries, oats, sunflower seeds, and coconut. Naturally low in sugar and beautifully pink, these energy bites are easy to prepare and perfect for a nutritious treat any time of day.

Ingredients

Main Ingredients

  • 200 g strawberries (approximately 1 cup sliced, about 12 strawberries)
  • 150 g oats (1.5 cups)
  • 140 g sunflower seeds (1 cup)
  • 50 g desiccated coconut (0.5 cups)
  • 1 tablespoon maple syrup
  • 1 teaspoon vanilla essence

For Coating

  • 2 tablespoons desiccated coconut

Instructions

  1. Prepare Strawberries: Remove the tops from the strawberries and measure out 200 grams, which roughly equals 1 cup of sliced strawberries. If you leave them whole, the volume might be closer to 1.5 or 2 cups.
  2. Combine Ingredients: Place the prepared strawberries along with oats, sunflower seeds, 50g desiccated coconut, maple syrup, and vanilla essence into a food processor. Blend thoroughly until the mixture forms a fine paste and comes together as a rollable dough.
  3. Chill Mixture: Refrigerate the mixture for about 30 minutes to make it easier to handle and shape. If using frozen berries, you may skip this step.
  4. Form Balls: Using a damp tablespoon, scoop out portions of the mixture. Wetting the spoon helps prevent sticking. Roll each portion into smooth balls with damp hands to keep the mixture from sticking to your fingers.
  5. Coat with Coconut: Place 2 tablespoons of desiccated coconut in a small bowl. Roll each formed ball in the coconut to evenly coat the outside.
  6. Chill and Set: Refrigerate the coated bliss balls for at least 2 hours or overnight before serving to help them firm up and enhance flavors.

Notes

  • Using a damp spoon and damp hands is key to handling the sticky mixture easily.
  • You can substitute frozen strawberries if fresh are unavailable, though chilling may not be necessary then.
  • The recipe works without coconut oil, but you can experiment if you prefer a richer texture.
  • Store the bliss balls refrigerated in an airtight container for up to 5 days or freeze for longer storage.
