  • 6 large eggs

Filling

  • 3 to 4 tablespoons real mayonnaise

  • ½ teaspoon garlic powder

  • 12 teaspoons lime juice

Instructions

  1. Boil the Eggs: Place the eggs in a saucepan and cover them with cold water, about 1 inch above the eggs. Bring the water to a boil over medium-high heat. Once boiling, cover the saucepan, turn off the heat, and let the eggs sit for 10-12 minutes. Then, transfer the eggs to an ice bath for at least 5 minutes to stop the cooking process and make peeling easier.
  2. Prepare the Eggs: Peel the cooled eggs and slice them lengthwise. Carefully remove the yolks and place them in a mixing bowl. Mash the yolks with a fork until they become crumbly.
  3. Make the Filling: In a small bowl, combine 3 tablespoons of mayonnaise, chipotle sauce, ground mustard, garlic powder, lime juice, crushed red pepper flakes, salt, and cracked black pepper. Mix until smooth. Add this seasoned mayo mixture to the mashed yolks and blend together until creamy and well combined. For an extra-smooth texture, use an immersion blender.
  4. Assemble and Garnish: Spoon or pipe the creamy filling back into the halved egg whites. Sprinkle the deviled eggs with freshly chopped cilantro or green onion, red pepper flakes, and a dash of paprika if desired. Serve immediately or refrigerate until ready to serve.
  5. Storage: Store any assembled deviled eggs in an airtight container in the refrigerator for up to 2 days to maintain freshness.
