Potatoes

  • 2 pounds small yellow potatoes
  • 2 teaspoons sea salt, divided

  • ¾ teaspoon onion powder
  • Freshly ground black pepper, to taste

Instructions

  1. Preheat and Prepare: Preheat your oven to 425°F. Liberally coat two baking sheets with olive oil to ensure the potatoes don’t stick and roast evenly.
  2. Boil Potatoes: In a large pot, place the small yellow potatoes along with 1 teaspoon of sea salt. Fill the pot with enough water to cover the potatoes by about 1 inch. Bring to a boil and cook the potatoes until they are soft and fork-tender, about 15 to 20 minutes.
  3. Drain and Smash: Drain the potatoes and let them cool just enough to handle safely. Place each potato individually onto the oiled baking sheets. Using the back of a measuring cup or a sturdy flat utensil, press down on each potato to smash it to approximately ¼-inch thickness.
  4. Season and Roast: Drizzle the smashed potatoes with 2 tablespoons of extra-virgin olive oil. Sprinkle with garlic powder, onion powder, the remaining 1 teaspoon of sea salt, and freshly ground black pepper. Roast in the preheated oven for 25 to 35 minutes, or until the potatoes are golden brown and crisp around the edges. Rotate the baking sheets halfway through cooking to ensure even roasting.
  5. Garnish and Serve: Once roasted, season to taste with additional sea salt or flaky sea salt if you prefer a crunch. Sprinkle with finely chopped fresh herbs and optionally add some grated Parmesan cheese for extra flavor. Serve warm and enjoy!
