Ingredients
Chicken and Seasoning
- 1 ¼ cup salsa (Tenayo original salsa preferred)
- 1 package taco seasoning (or ¼ cup taco seasoning)
- 1.5 lbs chicken breast
- ⅓ cup fresh cilantro, chopped
- Juice from 1 lime
Tacos
- 10 tortillas
- 1 ¼ cup cheese (cotija, cheddar, Mexican, or Monterey jack)
- Other toppings: lettuce, guacamole, pico de gallo, pickled onions, sour cream, lime wedges, tomato
Instructions
- Prepare the Sauce: Mix together the salsa and taco seasoning in the slow cooker, ensuring they blend well to create a flavorful base for the chicken.
- Add the Chicken: Place the chicken breasts into the slow cooker with the salsa mixture, making sure they are well coated.
- Cook the Chicken: Cook on high for 3 hours or low for 6 hours. Cooking on low for 6 hours is recommended for juicier, more tender chicken.
- Shred the Chicken: Remove the chicken from the slow cooker and shred it finely using two forks.
- Combine and Flavor: Return the shredded chicken to the slow cooker, mix in the chopped cilantro and lime juice to brighten the flavors.
- Assemble the Tacos: Warm the tortillas, then fill each with the shredded chicken and top with cheese and your choice of additional toppings such as lettuce, guacamole, pico de gallo, pickled onions, sour cream, lime, and tomato.
Notes
- Cooking Time: Opt for slow cooking on low heat for 6 hours to achieve the most tender and juicy chicken, though high for 3 hours works for quicker prep.
- Feel free to customize toppings to your liking for variety in flavor and texture.
- Warming tortillas before assembly enhances their pliability and taste.
