- 1 bunch broccolini (ends trimmed, florets cut into big pieces and stems cut into ½-inch pieces)

Instructions
- Preheat the oven: Set your oven to 450°F (232°C) and line a large rimmed baking sheet with parchment paper to prevent sticking and make cleanup easier.
- Prepare the ingredients: In a large bowl, combine the gnocchi, broccolini, cherry tomatoes, thinly sliced red onion, and sliced garlic. Drizzle with extra-virgin olive oil, then sprinkle sea salt, fresh thyme, za’atar, red pepper flakes, and several grinds of black pepper over everything. Toss well to ensure all ingredients are evenly coated with the seasonings.
- First roast: Spread the seasoned mixture evenly across the prepared baking sheet. Roast in the preheated oven for 10 minutes to begin softening the vegetables and gnocchi.
- Add the feta and continue roasting: Remove the baking sheet from the oven, stir the ingredients gently to promote even cooking, then scatter torn chunks of feta cheese evenly over the top. Return the tray to the oven and roast for an additional 15 to 20 minutes, or until the gnocchi is tender and the vegetables and feta are nicely browned and slightly caramelized.
- Garnish and serve: Remove from oven, garnish with fresh parsley if desired, adjust seasoning to taste with extra salt or pepper, and serve immediately for a warm, hearty meal.
