Ingredients

Crepe Batter

  • 2 cups warm organic whole milk
  • 1 cup all-purpose flour
  • 1 large egg
  • 1 tsp baking soda or baking powder
  • ½ tsp salt
  • ½ Tbsp sugar
  • 2 tsp extra virgin olive oil

Chicken Filling

  • 2 cups cooked chicken thighs, chopped
  • ½ small onion, chopped
  • ½ Tbsp unsalted butter
  • Pinch of salt and pepper

For Reheating

  • ½ Tbsp unsalted butter


Instructions

  1. Prepare the crepe batter: In a mixing bowl, whisk together 1 cup of warm milk and 1 cup flour until no clumps remain. Gradually add the remaining 1 cup warm milk, then lightly beat the egg and add it to the mixture. Stir in salt, baking powder (or baking soda), sugar, and extra virgin olive oil. Mix until the batter is smooth and runny.
  2. Cook the crepes: Heat a crepe pan over medium heat. Using a ladle, pour enough batter to cover the bottom of the pan thinly. Cook quickly, flipping once both sides are lightly browned. Repeat until all the batter is used.
  3. Make the chicken filling: In a sauté pan, melt ½ Tbsp unsalted butter over medium heat. Add the chopped onion and cook until it begins to brown. Add the cooked chopped chicken, season with salt and pepper, and sauté for a couple more minutes. Remove from heat and allow the filling to cool slightly.
  4. Grind the filling: Place the chicken mixture in a food processor or grinder and pulse until finely chopped but still textured.
  5. Assemble the crepes: Spoon the chicken filling onto each crepe and roll or fold as desired. Traditionally, these crepes are served with sour cream or Greek yogurt on the side.
  6. Reheat (optional): To reheat, melt ½ Tbsp unsalted butter in a pan and brown each side of the rolled crepes to achieve a golden color, enhancing flavor and texture before serving.
