Ingredients

4 sweet potatoes, peeled and cut into 1-inch cubes

1/4 cup extra-virgin olive oil, plus more for drizzling after cooking

1/4 cup honey

2 teaspoons ground cinnamon

Salt and freshly ground black pepper

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Arrange sweet potato cubes in a single layer on a roasting tray.
  3. Drizzle with olive oil and honey, then sprinkle with cinnamon, salt, and pepper. Toss well to coat evenly.
  4. Roast for 25–30 minutes, or until sweet potatoes are tender and lightly caramelized.
  5. Transfer to a serving platter and drizzle with a little extra olive oil before serving.

Notes

  • Add cayenne or smoked paprika for a spicy kick.
  • Swap honey for maple syrup for a different sweetness.
  • Sprinkle with toasted pecans or walnuts before serving.
  • For extra caramelization, roast at 400°F and check early.
  • Not recommended for freezing due to texture changes.
