Ingredients
4 sweet potatoes, peeled and cut into 1-inch cubes
1/4 cup extra-virgin olive oil, plus more for drizzling after cooking
1/4 cup honey
2 teaspoons ground cinnamon
Salt and freshly ground black pepper
Instructions
- Preheat oven to 375°F (190°C).
- Arrange sweet potato cubes in a single layer on a roasting tray.
- Drizzle with olive oil and honey, then sprinkle with cinnamon, salt, and pepper. Toss well to coat evenly.
- Roast for 25–30 minutes, or until sweet potatoes are tender and lightly caramelized.
