Description

This roasted sweet potato recipe delivers crispy, flavorful sweet potato cubes with a tender interior, seasoned with a blend of spices and cooked to perfection in the oven. Ideal as a nutritious side dish, these sweet potatoes bring warmth and comfort to any meal.

Ingredients

Sweet Potatoes

  • 2 lbs sweet potatoes, peeled and chopped into ½ inch cubes (about 6 cups)

Seasoning & Oil

  • 3 Tbsp olive oil
  • 1 tsp salt
  • ½ tsp ground black pepper
  • ½ tsp paprika
  • ½ tsp garlic powder
  • ¼ tsp ground cumin
  • ¼ tsp onion powder

Instructions

  1. Preheat Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper or aluminum foil to make cleaning easier.
  2. Prepare Sweet Potatoes: Wash, peel, and chop the sweet potatoes into uniform ½-inch cubes to ensure even cooking, yielding approximately 6 cups.
  3. Season Sweet Potatoes: Place the chopped sweet potatoes in a large bowl. Drizzle with 3 tablespoons of olive oil and sprinkle with salt, black pepper, paprika, garlic powder, cumin, and onion powder. Toss thoroughly until the cubes are evenly coated with the seasoning mixture.
  4. Arrange and Roast: Spread the seasoned sweet potato cubes in a single layer on the prepared baking sheet. Bake in the preheated oven for 40 minutes, flipping the cubes halfway through to promote even browning. The sweet potatoes should develop crispy edges while remaining tender inside.

Notes

  • Cut the sweet potatoes into uniform pieces to ensure even roasting.
  • For spicier flavor, add a pinch of cayenne pepper or chili powder.
  • Use a high smoke point oil like olive oil to achieve crispiness without burning.
  • Flipping halfway helps achieve an even roast and crispy texture on all sides.
  • Leftovers can be refrigerated for up to 3 days and reheated in the oven or air fryer.
