Juicy grilled chicken skewers marinated in a creamy ranch, Parmesan, and garlic blend. These skewers are bursting with savory flavor and make an easy, crowd-pleasing meal or appetizer.
Ingredients
For the Marinade:
½ cup ranch dressing (store-bought or homemade)
¼ cup grated Parmesan cheese
2 tablespoons olive oil
3 cloves garlic, minced
1 teaspoon dried parsley (or fresh parsley, chopped)
½ teaspoon black pepper
½ teaspoon garlic powder
1 teaspoon lemon juice (optional)
For the Skewers:
1½ pounds boneless, skinless chicken breasts or thighs, cut into 1-inch cubes

Instructions
- In a bowl, whisk together ranch dressing, Parmesan, olive oil, garlic, parsley, pepper, garlic powder, and lemon juice.
- Place cubed chicken in a resealable bag or shallow dish. Pour in the marinade, coat well, and refrigerate for 30 minutes to 2 hours.
- Thread marinated chicken onto skewers, leaving space between pieces. Soak wooden skewers beforehand if using.
- Preheat grill to medium-high heat. Grill skewers for 10–15 minutes, turning occasionally, until chicken reaches 165°F (75°C).
- Remove and let rest briefly. Garnish with parsley or Parmesan and serve with sides or dipping sauces.
Notes
- Use chicken thighs for a juicier result.
- Marinate overnight for even more flavor.
- Add herbs or red pepper flakes for variation.
- Can also be baked in the oven if a grill isn’t available.
