Description

A crisp and vibrant twist on traditional pico de gallo—this version features radishes as the star, combined with onion, lime juice, and cilantro for a refreshing side or topping.


Ingredients

1 cup chopped radishes (about 46 medium radishes)

½ red onion, finely diced

2 spring onions (scallions), thinly sliced

½ jalapeño, finely diced (optional)

2 Tbsp fresh lime juice

¼ cup chopped fresh cilantro

½ tsp salt (adjust to taste)


Instructions

  1. In a medium bowl, combine chopped radishes, diced red onion, sliced spring onions, jalapeño (if using), lime juice, cilantro, and salt.
  2. Stir thoroughly to mix. Taste and adjust lime juice or salt as needed.
  3. Let sit at room temperature for 10 minutes or chill in the fridge for 30 minutes before serving.

Notes

  • Omit jalapeño for a milder flavor—radishes add their own peppery kick.
  • Use parsley or basil instead of cilantro for a different herb note.
