Description
A crisp and vibrant twist on traditional pico de gallo—this version features radishes as the star, combined with onion, lime juice, and cilantro for a refreshing side or topping.
Ingredients
1 cup chopped radishes (about 4–6 medium radishes)
½ red onion, finely diced
2 spring onions (scallions), thinly sliced
½ jalapeño, finely diced (optional)
2 Tbsp fresh lime juice
¼ cup chopped fresh cilantro
½ tsp salt (adjust to taste)
Instructions
- In a medium bowl, combine chopped radishes, diced red onion, sliced spring onions, jalapeño (if using), lime juice, cilantro, and salt.
- Stir thoroughly to mix. Taste and adjust lime juice or salt as needed.
- Let sit at room temperature for 10 minutes or chill in the fridge for 30 minutes before serving.
Notes
- Omit jalapeño for a milder flavor—radishes add their own peppery kick.
- Use parsley or basil instead of cilantro for a different herb note.
- Serve soon after mixing for best crunch and freshness.
