Ingredients

Streusel Topping:

1 cup flour

¼ cup dark brown sugar

¼ cup melted unsalted butter, at room temperature

½ tsp ground cinnamon

¼ tsp salt

Pumpkin Cheesecake Filling:

8 oz cream cheese, softened

¼ cup pumpkin purée

2 tbsp powdered sugar

1 tsp vanilla extract

Maple Glaze:

½ cup powdered sugar

2 tbsp maple syrup

1 tsp vanilla extract

1 tsp milk


Instructions

  1. Mix flour, brown sugar, butter, cinnamon, and salt until crumbly for the streusel. Set aside.
  2. Whisk powdered sugar, maple syrup, vanilla, and milk until smooth to make the glaze. Set aside.
  3. Beat cream cheese, pumpkin purée, powdered sugar, and vanilla until smooth for the cheesecake filling.
  4. Preheat oven to 350°F (175°C). Cream butter and sugar until fluffy. Mix in milk (or buttermilk), vanilla, and eggs. Fold in flour, pumpkin spice, baking powder, and salt until just combined.
  5. Line a 9×6 loaf pan with parchment paper. Pour half of the batter in, spread cheesecake filling over it, then top with remaining batter. Smooth the top and sprinkle streusel evenly.
  6. Bake for 50–60 minutes until a toothpick inserted in the center comes out clean. Cool completely in the pan.
  7. Drizzle cooled cake with maple glaze, slice, and serve.
