Description
Pumpkin Pecan Cobbler is the perfect cozy fall dessert featuring a spiced pumpkin cake base topped with a crunchy pecan sugar mixture and baked with hot water to create a luscious caramel sauce at the bottom. This classic American cobbler is warm, comforting, and delightful served with vanilla ice cream.
Ingredients
For the Cobbler
- 1 cup + 3 tablespoons all purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 3/4 cup granulated sugar
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/2 teaspoon cloves
- 1/2 cup pumpkin puree
- 1/4 cup milk
- 1/4 cup melted butter or vegetable oil
- 1 1/2 teaspoons vanilla extract
For the Topping
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 1/4 cup chopped pecans
- 1 1/2 cups very hot water
Instructions
- Preheat Oven: Set your oven to 350°F (175°C) to prepare for baking the cobbler.
- Mix Dry Ingredients: In a medium bowl, combine the flour, baking powder, salt, granulated sugar, cinnamon, nutmeg, and cloves. Stir well and set aside.
- Combine Wet Ingredients: In a smaller bowl, mix together the pumpkin puree, milk, melted butter (or vegetable oil), and vanilla extract until fully blended.
- Create Batter: Pour the wet ingredients into the dry ingredients and gently mix until a thick batter forms. Do not overmix. Then, transfer the batter into an 8-inch casserole dish with high sides.
- Prepare Topping: In a separate bowl, mix granulated sugar, brown sugar, and chopped pecans evenly. Spread this mixture evenly over the batter in the casserole dish.
- Add Hot Water: Carefully pour 1 1/2 cups of very hot water over the topping layer without stirring to avoid mixing the layers.
- Bake: Place the casserole dish on a baking sheet to catch any spills and bake in the preheated oven for 40 minutes, or until the center is set and the top looks cake-like.
- Cool and Serve: Allow the cobbler to cool for 5-10 minutes. Serve warm, optionally garnished with extra pecans and a scoop of vanilla ice cream for a delicious finishing touch.
Notes
- Use an 8-inch casserole dish with high sides to prevent overflow when baking.
- Do not stir after pouring hot water; this creates the signature caramel sauce at the bottom.
- Place the casserole dish on a baking sheet to catch any potential drips or bubbles during baking.
- Allowing to cool slightly helps the sauce thicken and the cobbler to set properly.
- Vanilla ice cream or whipped cream pairs wonderfully with this warm dessert.
- You can substitute pumpkin puree with homemade or canned pumpkin for convenience.
