Ingredients
- 1/2 cup creamy cashew butter
- 1/2 cup dairy-free chocolate chips, melted (3.3 oz)
- 2 tablespoons avocado oil
- 1/2 cup unsweetened cocoa powder (47g)
- 2 tablespoons cassava flour (25g)
- 1 teaspoon espresso powder
- 1/2 teaspoon baking powder
- 1/4 teaspoon fine sea salt
- 1/2 cup maple syrup
- 2/3 cup pumpkin puree
- 2 large eggs
- 1/2 tablespoon vanilla extract
Instructions
- Preheat oven to 350ºF (175ºC) and line an 8×8-inch baking pan with parchment paper. Set aside.
- In a small saucepan over low heat, melt the cashew butter, chocolate chips, and avocado oil together. Stir until smooth and remove from heat to cool for 5 minutes.
- In a small bowl, whisk together the cocoa powder, cassava flour, espresso powder, baking powder, and salt.
- In a large bowl, whisk together maple syrup, pumpkin puree, eggs, and vanilla extract until well combined.
- Add the slightly cooled chocolate-cashew mixture to the wet ingredients. Mix with an electric hand mixer on medium speed until combined.
- Add the dry ingredients and mix on low speed until a thick, fudgy batter forms.
- Transfer the batter into the prepared pan and spread evenly. Bake for 20–22 minutes, or until the edges are set and the center is just slightly soft. A toothpick should come out with a few moist crumbs.
- Cool on the counter for 20 minutes, then refrigerate for 30 minutes before slicing.
- Lift the brownies out of the pan using the parchment paper. Slice into 16 squares, wiping the knife between cuts for clean edges.
