Description
This puff pastry cherry crostata is a rustic and elegant dessert made with sweet-tart cherries, cinnamon, and almond extract nestled in buttery puff pastry. Easy to make and beautifully golden, it’s perfect for any occasion.
Ingredients
½ (17.3 ounce) package frozen puff pastry sheets, thawed
1 pound cherries, pitted and halved
2 tablespoons brown sugar
1 tablespoon cornstarch
½ teaspoon ground cinnamon
½ teaspoon almond extract
¼ teaspoon salt
1 large egg, beaten
1 tablespoon water
1 tablespoon turbinado sugar, or to taste
1 tablespoon orange marmalade (optional)
Instructions
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Roll thawed puff pastry on a floured surface into an 11–12 inch circle and transfer to the prepared baking sheet.
- In a bowl, mix cherries, brown sugar, cornstarch, cinnamon, almond extract, and salt until cherries are well coated.
- Spoon cherry mixture into the center of the pastry, leaving a 2-inch border. Fold edges over the filling to form a rustic crust.
- Whisk egg with water and brush the pastry edges. Sprinkle with turbinado sugar.
- Bake for 23–30 minutes until pastry is golden and filling is bubbling.
- If using, melt marmalade in the microwave for 15–20 seconds and drizzle over the cherries.
- Let cool for 15 minutes before slicing and serving.
Notes
- Thaw and drain frozen cherries well to avoid soggy filling.
- Customize with other fruits like plums or berries.
- Top with whipped cream or vanilla ice cream for a richer dessert.
- Assemble just before baking for the best texture.
