Description

This puff pastry cherry crostata is a rustic and elegant dessert made with sweet-tart cherries, cinnamon, and almond extract nestled in buttery puff pastry. Easy to make and beautifully golden, it’s perfect for any occasion.


Ingredients

½ (17.3 ounce) package frozen puff pastry sheets, thawed

1 pound cherries, pitted and halved

2 tablespoons brown sugar

1 tablespoon cornstarch

½ teaspoon ground cinnamon

½ teaspoon almond extract

¼ teaspoon salt

1 large egg, beaten

1 tablespoon water

1 tablespoon turbinado sugar, or to taste

1 tablespoon orange marmalade (optional)


Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Roll thawed puff pastry on a floured surface into an 11–12 inch circle and transfer to the prepared baking sheet.
  3. In a bowl, mix cherries, brown sugar, cornstarch, cinnamon, almond extract, and salt until cherries are well coated.
  4. Spoon cherry mixture into the center of the pastry, leaving a 2-inch border. Fold edges over the filling to form a rustic crust.
  5. Whisk egg with water and brush the pastry edges. Sprinkle with turbinado sugar.
  6. Bake for 23–30 minutes until pastry is golden and filling is bubbling.
  7. If using, melt marmalade in the microwave for 15–20 seconds and drizzle over the cherries.
  8. Let cool for 15 minutes before slicing and serving.
