Description

Crispy chicken cutlets coated in seasoned pretzel crumbs and paired with a creamy honey mustard sauce—a satisfying blend of crunch, savory, and sweet.


Ingredients

Honey Mustard Sauce:

5 Tbsp full-fat mayonnaise

3 Tbsp honey

1 Tbsp Dijon mustard

1 Tbsp yellow mustard

1 tsp apple cider vinegar

1/8 tsp onion powder

1/8 tsp garlic powder

Chicken & Coating:

100 g (3.5 oz) pretzels, crushed

2 chicken breasts (approx. 250 g / 9 oz each), sliced into cutlets

35 g (¼ cup) plain flour

2 eggs, beaten

2 tsp paprika

¾ tsp salt

½ tsp garlic powder

½ tsp onion powder

½ tsp oregano

½ tsp black pepper

¼ tsp cayenne pepper

Cooking Oil & Garnishes:

180 ml (¾ cup) vegetable oil

Flaky sea salt, to serve

Finely diced chives, to serve


Instructions

  1. Whisk all honey mustard sauce ingredients in a bowl. Adjust sweetness and tang to taste. Set aside.
  2. Crush pretzels into coarse crumbs using a food processor or rolling pin.
  3. Set up three shallow dishes: one with flour, one with beaten eggs, and one with pretzel crumbs mixed with all seasonings.
  4. Slice chicken breasts into cutlets. Dredge in flour, dip in egg, then press into pretzel crumbs until well-coated.
  5. Heat oil in a skillet over medium heat to 180 °C (350 °F).
  6. Fry chicken in batches, 3–4 minutes per side, until golden brown and internal temperature reaches 165 °F (74 °C).
  7. Serve hot, garnished with sea salt and chives, with honey mustard sauce on the side.

Notes

  • To bake instead of fry, use a 200 °C (400 °F) oven for 15–20 minutes, flipping halfway.
  • Use crushed tortilla chips or panko as alternate coatings.
  • Air-fryer option: 180 °C (350 °F) for 10–12 minutes with light oil spray.
  • Store sauce separately to keep chicken coating crisp during leftovers.
