  • 1 (3.4 oz) box instant pistachio pudding mix
  • 1 1/2 cups powdered sugar

  • 1 cup white chocolate chips
  • 1/4 cup unsalted butter
  • 1/2 teaspoon vanilla extract

Instructions

  1. Prepare the cereal: Place the 6 cups of Rice Chex cereal into a large mixing bowl and set aside to be coated later.
  2. Melt the butter: In a microwave-safe bowl, melt 1/4 cup unsalted butter in 30-second intervals, stirring between each, until completely melted to ensure even consistency.
  3. Add chocolate and vanilla: Add 1 cup of white chocolate chips and 1/2 teaspoon vanilla extract to the melted butter. Microwave in 15 to 20-second bursts, stirring after each interval, until the mixture is smooth and fully combined.
  4. Mix in pistachio pudding: Stir in the entire box of instant pistachio pudding mix (3.4 oz) into the white chocolate mixture until it’s thoroughly blended and smooth.
  5. Coat the cereal: Pour the pistachio-chocolate mixture over the Rice Chex cereal. Gently stir to ensure every piece is evenly coated with the mixture without breaking the cereal.
  6. Coat with powdered sugar: Transfer the coated cereal into a large zip-top bag. Add 1 1/2 cups powdered sugar, seal the bag, and shake vigorously until all cereal pieces are well dusted and coated with powdered sugar.
