Description

Perfect Peach Cobbler is a classic summer dessert made with juicy ripe peaches baked under a golden, buttery biscuit topping. Sweet, tender fruit combines with a crisp-yet-soft crust for the ultimate comfort food, especially when served warm with vanilla ice cream. Ingredients

4 pounds fresh peaches, sliced 1/2-inch thick

1/4 cup granulated sugar

1/4 cup packed light brown sugar

1 tablespoon cornstarch

2 teaspoons vanilla extract

1/2 teaspoon fine sea salt

1/2 teaspoon ground cinnamon

2 cups all-purpose flour (240 g)

1/3 cup granulated sugar

2 teaspoons baking powder

1/2 teaspoon fine sea salt

1/2 cup cold unsalted butter, cut into 1-tablespoon chunks

2/3 cup cold buttermilk, plus extra for brushing

2 tablespoons turbinado sugar


Instructions

  1. Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
  2. In a large bowl, toss peaches with sugars, cornstarch, vanilla, salt, and cinnamon. Spread evenly in prepared dish and bake for 10 minutes.
  3. In a food processor, pulse flour, sugar, baking powder, and salt. Add butter and pulse until coarse crumbs form. Drizzle in buttermilk and pulse until clumps form. (Or make by hand with a pastry cutter.)
  4. Remove peaches from oven. Scatter topping over peaches, leaving gaps. Brush with buttermilk and sprinkle with turbinado sugar.
  5. Bake for 40 minutes, until topping is golden and filling bubbly.
  6. Cool 20–30 minutes to let juices thicken. Serve warm with ice cream.

Notes

  • No need to peel peaches—skins soften during baking.
  • Pre-baking peaches prevents soggy topping.
  • Cooling after baking helps filling set.
  • Can be adapted with nectarines, plums, or berries.
