Description

These Big Fat Peanut Butter Oatmeal Chocolate Chip Cookies are thick, chewy, and loaded with creamy peanut butter, hearty oats, and melty chocolate chips. Perfectly satisfying and easy to make, they’re a dream cookie for peanut butter and chocolate lovers.


Ingredients

  • 1 1/2 cups (188g) all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup (226g) unsalted butter, softened
  • 1 cup (200g) granulated sugar
  • 1/2 cup (100g) packed light or dark brown sugar
  • 2 large eggs, at room temperature
  • 1 cup (240g) creamy peanut butter
  • 2 teaspoons pure vanilla extract
  • 2 cups (170g) old-fashioned whole rolled oats
  • 2 1/2 cups (450g) semi-sweet chocolate chips, plus more for topping if desired

Instructions

  1. In a medium bowl, whisk together flour, baking powder, baking soda, and salt. Set aside.
  2. In a large bowl, beat the butter with a hand or stand mixer on medium-high speed until smooth, about 1 minute.
  3. Add granulated and brown sugar, and beat on medium-high until creamed, about 2 minutes.
  4. Mix in eggs, peanut butter, and vanilla extract, and beat on high until fully combined, scraping down the bowl as needed.
  5. Add dry ingredients to the wet ingredients and mix on low speed until just combined.
  6. Add oats, then beat in chocolate chips until the dough is thick and sticky.
  7. Cover and chill dough for at least 20 minutes (up to 4 days). If chilled longer than 1 hour, allow dough to sit at room temperature for 30 minutes before scooping.
  8. Preheat oven to 350°F (177°C). Line baking sheets with parchment or silicone mats.
  9. Scoop 2 tablespoons of dough per cookie and place 3 inches apart on baking sheets.
  10. Bake for 12–14 minutes or until edges are lightly browned and centers are soft.
  11. Cool on the baking sheet for 5 minutes, then transfer to a wire rack. Press extra chocolate chips on top if desired.
