A rich, creamy, high-protein peanut butter mousse made with cottage cheese and natural sweeteners—no baking required and ready in minutes.
Ingredients
1 cup cottage cheese (full‑fat or low‑fat)
2 tablespoons creamy peanut butter (natural, unsweetened preferred)
1–2 tablespoons sweetener (honey, maple syrup, or stevia)
1 teaspoon vanilla extract
2 tablespoons cocoa powder (optional, for chocolate flavor)
Pinch of salt
Optional toppings: sliced bananas, fresh berries, chopped nuts, chocolate syrup
Instructions
- Prepare a blender or food processor; high-speed works best.
- Add cottage cheese, peanut butter, sweetener, vanilla extract, cocoa powder (if using), and a pinch of salt.
- Pulse a few times, then blend on medium-high for about 30–45 seconds until smooth and creamy. Scrape down sides as needed.
- Adjust consistency as needed—add a splash of milk if too thick, or more peanut butter or cottage cheese if too thin.
- Transfer mousse into bowls or jars and refrigerate for at least 30 minutes to set.
- Top with your favorite garnishes like fruit, nuts, or chocolate drizzle and serve chilled.
