Ingredients

For the Yogurt Bars

For the Chocolate Coating

Instructions

  1. Prepare the base: Line a baking sheet with wax paper or a silicone baking mat to prevent sticking and make cleanup easy.
  2. Mix the filling: In a small bowl, combine 1 cup plain Greek yogurt, ½ cup creamy peanut butter, 1 tablespoon maple syrup or honey, and 1 teaspoon vanilla extract. Stir the ingredients together until the mixture is smooth and cohesive.
  3. Form the bars: Use a cupcake or ice cream scoop to portion half of the yogurt mixture into 4-6 mounds on the lined baking sheet. Press a popsicle stick into each mound firmly. Then, scoop the remaining yogurt mixture on top of each mound to fully cover the popsicle sticks. Use a small offset spatula to gently flatten and shape the mounds into bars.
  4. Add peanuts and freeze: Evenly scatter 2 tablespoons of roasted and salted peanuts over the yogurt mounds for added crunch and flavor. Place the pan in the freezer for at least 2 hours, or until the bars are frozen solid.
  5. Melt the chocolate coating: When the yogurt bars are frozen, combine 1 cup chocolate chips or chopped chocolate and 2 tablespoons coconut oil in a microwave-safe bowl. Microwave at 50% power for 30 seconds, stir, then continue microwaving in 15-20 second intervals while stirring until the mixture is fully melted and smooth.
  6. Dip the bars: Remove the frozen yogurt bars from the freezer. Dip each bar into the melted chocolate coating, fully covering them. Place the coated bars back on the lined baking sheet.
