Description
These Peanut Butter Frozen Yogurt Bars combine creamy peanut butter and tangy Greek yogurt for a refreshing treat, topped with crunchy salted peanuts and coated in rich chocolate. Perfect for a healthy, satisfying frozen snack that balances protein with a touch of sweetness.
Ingredients
For the Yogurt Bars
- 1 cup plain Greek yogurt
- ½ cup creamy peanut butter
- 1 tablespoon maple syrup or honey
- 1 teaspoon vanilla extract
- 2 tablespoons roasted and salted peanuts (optional)
For the Chocolate Coating
- 1 cup chocolate chips or chopped chocolate (6 oz.)
- 2 tablespoons coconut oil
Instructions
- Prepare the base: Line a baking sheet with wax paper or a silicone baking mat to prevent sticking and make cleanup easy.
- Mix the filling: In a small bowl, combine 1 cup plain Greek yogurt, ½ cup creamy peanut butter, 1 tablespoon maple syrup or honey, and 1 teaspoon vanilla extract. Stir the ingredients together until the mixture is smooth and cohesive.
- Form the bars: Use a cupcake or ice cream scoop to portion half of the yogurt mixture into 4-6 mounds on the lined baking sheet. Press a popsicle stick into each mound firmly. Then, scoop the remaining yogurt mixture on top of each mound to fully cover the popsicle sticks. Use a small offset spatula to gently flatten and shape the mounds into bars.
- Add peanuts and freeze: Evenly scatter 2 tablespoons of roasted and salted peanuts over the yogurt mounds for added crunch and flavor. Place the pan in the freezer for at least 2 hours, or until the bars are frozen solid.
- Melt the chocolate coating: When the yogurt bars are frozen, combine 1 cup chocolate chips or chopped chocolate and 2 tablespoons coconut oil in a microwave-safe bowl. Microwave at 50% power for 30 seconds, stir, then continue microwaving in 15-20 second intervals while stirring until the mixture is fully melted and smooth.
- Dip the bars: Remove the frozen yogurt bars from the freezer. Dip each bar into the melted chocolate coating, fully covering them. Place the coated bars back on the lined baking sheet.
- Serving and storage: Enjoy the bars immediately for a soft bite, or return them to the freezer for later. If frozen, let thaw 5-10 minutes before eating to soften slightly for easy biting.
Notes
- You can swap the peanut butter with almond or cashew butter for a different nutty flavor.
- Use honey instead of maple syrup for a different natural sweetness.
- Ensure the Greek yogurt is well drained or strained for a thicker consistency if needed.
- Store any leftover bars in an airtight container in the freezer for up to 1 week.
- For a nut-free version, omit the peanuts and use sunflower seed butter or tahini.
