Instructions

  1. Preheat oven and prepare baking sheet: Preheat your oven to 350 degrees Fahrenheit. Line a baking sheet with a large piece of parchment paper and set it aside.
  2. Mix the dough: In a large bowl, whisk together the peanut butter, Greek yogurt, brown sugar, rolled oats, eggs, baking soda, and coarse salt until everything is well combined. If the mixture appears too runny, add a few more tablespoons of oats to achieve a thicker dough consistency. Fold in the dark chocolate chips gently to incorporate.
  3. Scoop the cookie dough: Using an ice cream scoop, drop dollops of cookie dough onto the parchment-lined baking sheet, making sure to leave about a ½-inch gap between each cookie to allow for spreading. If desired, sprinkle each cookie with flaky sea salt on top for extra flavor.
  4. Bake the cookies: Place the baking sheet in the preheated oven and bake the cookies for 10 to 15 minutes. Look for the cookies to start cracking on the tops as an indicator they are done.
