Ingredients
- 1 3/4 cup all-purpose flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, at room temperature
- 1/3 cup brown sugar
- 1/3 cup granulated sugar
- 1 egg
- 1 teaspoon vanilla extract
- 3/4 cup peanut butter
- 1/2 cup jam or jelly (your choice of flavor)
Instructions
- Preheat the oven to 350ºF (175ºC). Line 2 large baking sheets with parchment paper or silicone liners.
- In a bowl, whisk together the flour, baking soda, and salt. Set aside.
- In a separate large bowl, cream together the butter, brown sugar, and granulated sugar until light and fluffy.
- Add the egg and vanilla extract to the creamed mixture and mix until combined.
- Mix in the peanut butter until smooth.
- Gradually add the flour mixture to the wet ingredients, mixing just until incorporated.
- Roll the dough into 24 equal-sized balls and place 12 on each prepared baking sheet, spacing them at least 2 inches apart.
- Use a fork to press a crisscross pattern into each dough ball, flattening slightly.
- Use your thumb or knuckle to create a small indentation in the center of each cookie.
- Fill each indentation with about 1 teaspoon of jam or jelly.
- Bake for 10–12 minutes, rotating the baking sheets halfway through if using both racks.
- Remove from the oven and allow cookies to cool on the pan before serving.
Notes
- Use smooth or crunchy peanut butter based on your texture preference.
- Try different jams like raspberry, strawberry, or grape for variety.
- Let the cookies cool completely before storing to avoid sogginess from the jam.
- Store in an airtight container for up to 5 days at room temperature.
