- Slice the Potatoes: Use a mandolin slicer to cut the russet potatoes into thin rounds, slightly thinner than 1/8-inch thickness. If a mandolin is unavailable, carefully slice with a sharp knife, although this will require more time and effort.
- Rinse and Soak: Rinse the potato slices thoroughly under cold water, agitating them with your hands to remove surface starch until the water runs clear. Soak the slices in cold water for 15 to 30 minutes to further remove excess starch, which is essential for achieving crispiness.
- Dry the Potatoes: Drain the soaked potatoes and thoroughly dry them using a kitchen towel, making sure to also dry the bowl used. Removing all moisture ensures the chips will crisp up properly in the oven.
- Season the Potatoes: Return the dried potato slices to the bowl. Add olive oil, paprika, garlic powder, salt, and black pepper. Toss everything together with your hands to ensure even coating of the seasoning mixture on each slice.
- Arrange and Bake: Spread the seasoned potato slices evenly on the prepared baking sheets in a single layer, making sure they do not overlap or touch. Bake in the preheated oven for 20 to 25 minutes, flipping the chips halfway through cooking to promote even browning and crispness.
