Instructions
- Prepare the baking pan: Preheat your oven to 350°F (175°C). Grease a 9×5 inch loaf pan thoroughly, or line the bottom with parchment paper to prevent sticking.
- Mix ingredients: In a large mixing bowl, combine all the dry ingredients—oat flour, rolled oats, baking soda, baking powder, salt, and cinnamon. Then add the wet ingredients—mashed bananas, pure maple syrup, coconut oil, and vanilla extract. Stir everything until just evenly combined; avoid overmixing to keep the bread tender.
- Pour batter and add chocolate chips: Smooth the batter evenly into the prepared loaf pan. If using, sprinkle the chocolate chips on top evenly.
- Bake the bread: Place the pan in the preheated oven and bake for 35 minutes, or until a toothpick inserted in the center comes out mostly clean with just a few moist crumbs attached.
