Ingredients

Crepe Batter

  • 1 ⅓ cup oat flour
  • 1 cup plant-based milk
  • 4 eggs
  • 1 tbsp oil (coconut oil or avocado oil spray for cooking)
  • ¼ tsp salt
  • Pinch of salt


Instructions

  1. Mix the batter: Add all the ingredients to a large mixing bowl and whisk together until a batter has formed. A few lumps are fine, or use a blender for a super-smooth batter. Let the batter rest for a few minutes to hydrate the flour.
  2. Heat the pan: Place an 8-inch cast iron skillet or non-stick pan over medium heat. Once hot, add a small amount of oil or dairy-free butter to grease the pan.
  3. Cook the crepes: Pour 1/4 cup of batter into the center of the pan, tilting the pan immediately in a circular motion so the batter spreads thinly and evenly across the bottom.
  4. First side cooking: Cook the crepe for 30 seconds to 1 minute until the edges start to curl and small bubbles form on the surface.
  5. Flip and cook other side: Carefully flip the crepe using a spatula and cook the other side for about 30 seconds until lightly browned.
  6. Repeat the process: Continue cooking the remaining batter in the same way, stacking finished crepes on a plate covered with a tea towel at room temperature to keep warm until serving.
