Ingredients

Wet Ingredients

  • 1 cup (2 sticks) unsalted butter, melted
  • 2 large eggs

  • 4 overripe bananas, mashed (about 1-1/2 cups)

Dry Ingredients

  • 1 cup granulated sugar
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda

  • 1/2 cup Nutella chocolate hazelnut spread
  • 1 ripe banana, thinly sliced for garnishing


Instructions

  1. Preheat and Prepare Pan: Preheat your oven to 350°F (175°C). Generously spray a 12-cup muffin pan with non-stick cooking spray to ensure easy removal of the muffins after baking.
  2. Mix Wet Ingredients: In a large bowl, melt the butter and let it cool slightly. Whisk in the granulated sugar until combined, then add the eggs and vanilla extract, mixing thoroughly to blend.
  3. Combine Dry Ingredients: Add the all-purpose flour and baking soda to the wet mixture. Stir gently to combine without overmixing. Then fold in the mashed overripe bananas until the batter is just combined to retain moisture and texture.
  4. Layer Batter and Nutella (Part 1): Fill each muffin cup halfway with the batter. Spoon about 1 teaspoon of Nutella in several spots over the batter in each cup. Use the end of a chopstick or a small utensil to gently swirl the Nutella through the batter to create a marbled effect.
  5. Add Remaining Batter and Nutella (Part 2): Add the remaining batter evenly on top of the first layer, filling each muffin cup almost full. Again, dollop 1 teaspoon of Nutella in a few spots on the top layer of batter. Swirl Nutella gently through the top layer to maintain the marbled pattern.
  6. Garnish with Banana Slices: Slice the remaining ripe banana into 12 thin pieces. Place one slice in the center of each muffin cup atop the swirled batter to garnish and add extra banana flavor and visual appeal.
  7. Bake Muffins: Place the muffin pan in the oven and bake for 30-35 minutes or until the muffins turn golden brown and a toothpick inserted in the center comes out clean.
