Description

No-Bake Pecan Pie Bites are a healthy, bite-sized twist on the classic pecan pie made with dates, pecans, warm spices, and a rich chocolate coating. Naturally sweetened and free from gluten, dairy, and refined sugar, these vegan-friendly bites are quick to make, freezer-friendly, and perfect for snacking, entertaining, or gifting during the holidays.


Ingredients

1 cup pecans (plus extra for topping)

1 cup pitted dates, soaked

2 tablespoons coconut sugar or monk fruit

Pinch of sea salt

1 teaspoon vanilla extract

1 teaspoon cinnamon (optional)

1 ¼ cups chocolate chips


Instructions

  1. In a food processor, combine pecans, soaked dates, coconut sugar (or monk fruit), sea salt, vanilla, and cinnamon. Process until a sticky dough forms, scraping down the sides as needed.
  2. Roll mixture into small balls and flatten slightly with your palm. Place on a lined cookie sheet.
  3. Freeze for 15 minutes to firm up.
  4. Melt chocolate chips until smooth. Dip each pecan bite into melted chocolate, coating fully.
  5. Place a whole pecan on top of each bite. Return to the lined tray.
  6. Freeze again until chocolate is hardened. Serve chilled or at room temperature.
