Ingredients

Peanut Butter Oat Layer

  • 1.5 cups peanut butter
  • 1.5 cups rolled oats, processed finely in a food processor to make oat flour
  • 1/4 cup maple syrup

Chocolate Topping

  • 1 cup chocolate chips
  • 1 tsp coconut oil (optional)


Instructions

  1. Make Oat Flour: Blend the rolled oats in a high-speed blender or food processor until finely ground to create oat flour.
  2. Combine Peanut Butter and Maple Syrup: In a medium microwave-safe bowl, add peanut butter and maple syrup. Microwave for 40-60 seconds, then stir thoroughly until the mixture is completely combined and smooth.
  3. Mix in Oat Flour: Gradually add the blended oat flour to the peanut butter mixture. Mix well using a spoon or food processor. The mixture will be thick and moldable. If too dry or crumbly, add additional maple syrup or peanut butter, about a teaspoon at a time. Optionally add 1/4 to 1/3 cup pumpkin puree for extra moisture.
  4. Prepare Muffin Pan: Line a muffin pan with cupcake liners or use a silicone muffin pan. Note that removing the cups will be easier with liners.
  5. Fill Muffin Cups: Evenly scoop the peanut butter oat mixture into each muffin hole. Press down firmly with your fingers to form compact bases.
  6. Melt Chocolate: In a microwave-safe small bowl, combine chocolate chips and optional coconut oil. Heat in 30-second intervals, stirring between each until chocolate is completely melted and smooth.
  7. Add Chocolate Layer: Pour melted chocolate over each peanut butter oat cup, smoothing the tops with the back of a spoon. Optionally sprinkle flaky salt, sprinkles, or mini chocolate chips on top before chocolate sets.
  8. Chill to Set: Refrigerate the cups for 2-3 hours to allow them to set fully.
  9. Serve and Store: Carefully remove cups from liners or silicone pan. Store in an airtight container in the refrigerator for up to 5 days for best freshness.
