These No Bake Oatmeal Scotchies combine the chewy texture of quick oats with rich butterscotch flavor. A quick and easy dessert that’s sweet, fudgy, and perfect for satisfying your cookie cravings without turning on the oven.
Ingredients
- ½ cup unsalted butter
- ½ cup milk
- 2 cups granulated sugar
- 1 teaspoon vanilla extract
- Pinch of kosher salt
- 1 cup butterscotch morsels
- 3 cups quick cook oatmeal (dry)
Instructions
- In a large saucepan over medium-high heat, combine butter, sugar, and milk. Bring to a boil and continue boiling for a full minute.
- Remove from heat and stir in vanilla extract, kosher salt, and butterscotch morsels.
- Stir for 1–2 minutes. The butterscotch will not fully melt, which is fine.
- Fold in the quick cook oatmeal until fully combined.
- Drop by large cookie scoop (about 2 tablespoons each) onto a parchment-lined baking sheet.
- Let the cookies set and cool for about 15 minutes.
- Store in an airtight container at room temperature.

- Store uneaten cookies in an airtight container at room temperature.
- Use quick oats, not old-fashioned oats, to help the cookies bind properly.
- Do not cook the oatmeal before adding it to the mixture.
- It’s okay if the butterscotch morsels don’t fully melt—softened and gooey is perfect.
- These are very sweet and more like a fudge than a cookie. A little goes a long way!
