Description

These No Bake Oatmeal Scotchies combine the chewy texture of quick oats with rich butterscotch flavor. A quick and easy dessert that’s sweet, fudgy, and perfect for satisfying your cookie cravings without turning on the oven.


Ingredients

  • ½ cup unsalted butter
  • ½ cup milk
  • 2 cups granulated sugar
  • 1 teaspoon vanilla extract
  • Pinch of kosher salt
  • 1 cup butterscotch morsels
  • 3 cups quick cook oatmeal (dry)

Instructions

  1. In a large saucepan over medium-high heat, combine butter, sugar, and milk. Bring to a boil and continue boiling for a full minute.
  2. Remove from heat and stir in vanilla extract, kosher salt, and butterscotch morsels.
  3. Stir for 1–2 minutes. The butterscotch will not fully melt, which is fine.
  4. Fold in the quick cook oatmeal until fully combined.
  5. Drop by large cookie scoop (about 2 tablespoons each) onto a parchment-lined baking sheet.
  6. Let the cookies set and cool for about 15 minutes.
  7. Store in an airtight container at room temperature.

  • Use quick oats, not old-fashioned oats, to help the cookies bind properly.
  • Do not cook the oatmeal before adding it to the mixture.
  • It’s okay if the butterscotch morsels don’t fully melt—softened and gooey is perfect.
