Description

These No-Bake Cinnamon Roll Bites are a delicious and healthy twist on the classic cinnamon roll, made without any baking. Filling Ingredients

  • 1 cup packed pitted dates (about 11 medjool dates, ~200 g or 1 cup measured after pitting)
  • 1 Tbsp coconut oil, softened or melted
  • 1 ½ Tbsp cinnamon
  • 1/8 tsp sea salt
  • 1/2 tsp vanilla paste
  • 1/2 – 1 Tbsp water


Instructions

  1. Prepare the dough: Add oat flour, almond flour, and salt to a food processor. Pulse 3-4 times to combine. Add coconut oil, maple syrup, and vanilla paste, then pulse again to distribute the liquids evenly. Run the processor for about 10 seconds until the mixture starts to come together into a dough.
  2. Shape the dough: Transfer the dough onto parchment paper and gently knead it into a ball. Shape this ball into a rectangle, cover with parchment, and roll it into an approximately 7-inch square about 1/6 inch thick using a rolling pin or your hands. Refrigerate the dough while preparing the filling.
  3. Make the filling: In the same food processor, combine pitted dates, coconut oil, cinnamon, salt, vanilla paste, and start with 1/2 tbsp water. Blend until a thick, cohesive paste forms, adding the remaining water if necessary to achieve smoothness.
  4. Assemble the rolls: Remove the dough from the refrigerator and evenly spread the cinnamon date filling over it. Lightly grease your spatula with coconut oil if the filling is sticky. Starting from the bottom, carefully roll up the dough, peeling away the parchment as you go.
  5. Slice the bites: Using a sharp knife or dental floss, cut the roll into 12 pieces, each about 3/4 inch thick. Serve immediately at room temperature or refrigerate for 30 minutes if you prefer them chilled.
  6. Store leftovers: Keep any leftover cinnamon roll bites refrigerated for up to 1 week or frozen for 1 month.
