Description

No-Bake Biscoff Truffles are a quick and easy treat made from crushed Biscoff cookies, cream cheese, and milk, dipped in creamy white chocolate. These delightful no-bake truffles are perfect for satisfying your sweet tooth without turning on the oven.


Ingredients

Truffle Mixture

  • 1 sleeve of Biscoff cookies, 32 cookies
  • ¼ cup cream cheese, room temperature
  • 1-2 tablespoons milk

Coating

  • 1 ½ cups (250 g) white chocolate, chopped or chocolate chips

Garnish

  • 2 cookies, crushed into crumbs


Instructions

  1. Prepare Cookie Crumbs: Set aside 2 Biscoff cookies to crush into crumbs for garnish. Place the remaining 30 cookies in a food processor and blend until they reach a fine sand-like consistency.
  2. Make Dough: Add the cream cheese to the processed cookies and pulse to blend. Slowly add 1 to 2 tablespoons of milk, one tablespoon at a time, until the dough comes together into a workable consistency. Transfer the dough to a bowl and refrigerate for 30 minutes to chill.
  3. Form Truffles: Line a baking sheet with wax or parchment paper. Remove the dough from the refrigerator and form into 1-inch diameter balls using your hands. Place the formed truffles on the lined baking sheet and chill in the refrigerator for an additional 10 minutes.
  4. Melt Chocolate: Melt the white chocolate using a double boiler method—gently heating the chopped chocolate over simmering water until smooth and fully melted.
  5. Dip Truffles: Dip each chilled truffle ball into the melted white chocolate to coat completely. Return the coated truffles to the baking sheet.
  6. Set and Store: Place the dipped truffles in the refrigerator for a few minutes until the chocolate hardens. Store in an airtight container in the refrigerator for up to one week.
