Ingredients
1 can (15 oz) pumpkin puree (not pumpkin pie mix)
1 cup whole milk
¾ cup packed light brown sugar
⅓ cup unsweetened cocoa powder
2 oz 70% cocoa dark chocolate, finely chopped
2 tablespoons molasses
1 tablespoon pumpkin pie spice
2 teaspoons pure vanilla extract
½ teaspoon salt
3 cups whole milk
8 tablespoons espresso powder
Whipped cream (optional)
Chocolate syrup (optional)
Chocolate shavings (optional)
Instructions
- Combine pumpkin puree, 1 cup milk, brown sugar, cocoa powder, chopped dark chocolate, molasses, and pumpkin pie spice in a saucepan over medium‑low. Cook 2–3 minutes, stirring until thick syrup forms.
- Remove from heat, stir in vanilla and salt. Set aside to cool and thicken.
- Heat 3 cups whole milk in a separate saucepan until simmering, then remove from heat.
- For each serving: add 2 tablespoons espresso powder to a mug, pour in ¾ cup hot milk, stir to dissolve.
- Stir in ½ cup pumpkin mocha syrup. Add whipped cream, chocolate syrup, and shavings if desired.
- Repeat for additional servings to make 3–4 mugs total.
Notes
- Use oat or almond milk for a dairy-free version.
- Substitute brewed espresso shots instead of instant powder.
- Add cinnamon or nutmeg on top for extra warmth.
- Adjust sugar level in syrup to your sweetness preference.
