Instructions
- Make the dressing: In a medium bowl, whisk together the mayonnaise, olive oil, lemon juice, miso paste, dijon mustard, minced garlic, and black pepper until the mixture is smooth and emulsified.
- Prepare the salad greens: Wash the romaine lettuce thoroughly and dry using a clean kitchen towel or a salad spinner. Slice the leaves vertically along the rib 1-2 times, then stack and chop them into ½-inch (1.25cm) lengths for a chopped salad texture.
- Assemble the salad: In a large serving bowl, combine the chopped lettuce, roasted cashews, grated Parmesan cheese, and wonton chips. Add the prepared dressing and toss everything together until evenly coated. Serve immediately for best texture.
