Mint Aero Rocky Road is a no-bake chocolate treat combining creamy melted milk chocolate with crunchy biscuits, fluffy marshmallows, and chunks of Mint Aero, finished with a minty green white chocolate drizzle. This easy, indulgent dessert is perfect for parties, gifting, or satisfying your sweet tooth with a refreshing minty twist.
Ingredients
400 g milk chocolate
125 g golden syrup
125 g unsalted butter
150 g digestives, crushed
150 g mini marshmallows
300 g Mint Aero (bubbles or bars), chopped
75 g white chocolate
Green food colouring
Extra Mint Aero (for topping), crushed
Instructions
- Line a 9×9-inch square baking tin with parchment paper and set aside.
- Melt milk chocolate, golden syrup, and butter together in a bowl over a double boiler or in the microwave until smooth.
- Cool the mixture for 5 minutes to avoid melting the marshmallows.
- Stir in crushed digestives, mini marshmallows, and chopped Mint Aero until well combined.
- Pour mixture into prepared tin, spread evenly, and refrigerate until set.
- Melt white chocolate and tint with green food coloring.
- Drizzle the green white chocolate over the rocky road and top with extra crushed Mint Aero. Chill again until firm.
- Slice into 16–25 squares and serve.
Notes
- Use a sharp knife dipped in hot water for clean slicing.
- Can be customized with nuts, dried fruit, or different biscuits.
