Description

These Mediterranean quesadillas offer a delicious and healthy twist on the classic quesadilla. Packed with fresh vegetables, salty feta, and creamy mozzarella, they make a flavorful and nutritious dinner option that’s easy to prepare on the stovetop.


Ingredients

Vegetables

  • 2 tablespoons chopped fresh tomatoes
  • 2 tablespoons diced red onion
  • 1 red bell pepper, chopped
  • 1 cup baby spinach
  • 2 cloves garlic, minced

Dairy

  • 1/4 cup crumbled feta cheese
  • 3 oz mozzarella

Other

  • 1 teaspoon olive oil
  • 2 large tortillas


Instructions

  1. Heat the oil: Add the olive oil to a large non-stick skillet and heat it over medium heat to prepare for sautéing the vegetables.
  2. Sauté vegetables: Add the chopped tomatoes, diced red onion, and chopped red bell pepper to the skillet. Cook for 3-4 minutes, stirring occasionally, until they begin to soften.
  3. Add spinach and garlic: Stir in the baby spinach and minced garlic, cooking for an additional 2 minutes until the spinach has wilted and the mixture is fragrant.
  4. Remove vegetable mixture: Transfer the cooked vegetable mixture from the pan to a separate bowl to cool slightly.
  5. Assemble quesadillas: Place one tortilla on a flat surface and spread half of the veggie mixture onto one half of the tortilla. Sprinkle half the crumbled feta and half the mozzarella cheese over the vegetables. Fold the tortilla in half to enclose the filling. Repeat with the second tortilla and remaining ingredients.
  6. Cook quesadillas: Place the folded quesadillas back into the skillet over medium heat. Cook each side for 3-4 minutes until the tortillas are golden brown and the cheese inside has melted.

Notes

  • Use a non-stick skillet to prevent sticking and help achieve a golden crust.
  • Feel free to substitute mozzarella with another melting cheese like Monterey Jack or provolone.
