Ingredients

Vegetables & Legumes

  • 21 oz precooked lentils (1 jar)
  • 1 cucumber
  • 2 large tomatoes (Rosa variety preferred)
  • 2 small green peppers
  • A handful of black olives

Seasonings & Dressings

  • 2 pieces preserved lemon, finely chopped
  • 2 teaspoons zaatar
  • 1 teaspoon sumac
  • 3 tablespoons extra virgin olive oil
  • 1 tablespoon vinegar
  • A pinch of salt


Instructions

  1. Prepare the vegetables: Cut the tomatoes, cucumber, and green peppers into small pieces. For added texture and color, partially peel the cucumbers, leaving some skin strips intact.
  2. Rinse the lentils: Place the precooked lentils in a colander and rinse under running water until the water runs clear to remove any jar residue. Drain thoroughly before adding to the salad.
  3. Combine flavorings: Add the finely chopped preserved lemons, zaatar, and sumac to the lentils and vegetables to infuse the salad with distinctive Mediterranean flavors.
  4. Add the dressing: Pour in the extra virgin olive oil and vinegar to dress the salad evenly.
  5. Mix thoroughly: Combine all ingredients gently but thoroughly to ensure even distribution of flavors. Add a pinch of salt to taste and give the salad one final mix.
