2 boneless, skinless chicken breasts, cut into bite-sized pieces (for chicken & vegetables)
2 medium zucchinis, sliced into half-moons (for chicken & vegetables)

½ red onion, thinly sliced (for chicken & vegetables)

2 tablespoons olive oil (for chicken & vegetables)

Instructions
- Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish with olive oil or cooking spray.
- In a large bowl, toss the chicken, zucchini, cherry tomatoes, red onion, and minced garlic with olive oil and the Mediterranean seasoning (oregano, basil, smoked paprika, salt, pepper, and red pepper flakes, if using). Mix well to ensure everything is evenly coated with the spices.
- Spread the seasoned chicken and vegetable mixture evenly in the prepared baking dish. Sprinkle the shredded mozzarella cheese and grated Parmesan cheese over the top of the chicken and vegetables.
