Description

A decadent Matcha Chocolate Bar featuring creamy white chocolate infused with vibrant matcha, topped with a crispy chocolate layer and crunchy peanuts, offering a unique and indulgent treat for matcha and chocolate lovers.


Ingredients

15 g matcha powder

50 g milk (warm)

1 egg yolk

200 g whipping cream

200 g white chocolate chips

100 g chocolate chips

40 g unsalted butter

40 g chopped peanuts


Instructions

  1. Gradually add the warm milk to the matcha powder while stirring to ensure it’s fully combined and smooth.
  2. In a saucepan, combine the egg yolk, matcha milk, and whipping cream. Heat the mixture over low heat, stirring constantly. Once smooth, add the white chocolate chips and whisk until fully melted and incorporated. Sift the mixture to ensure a smooth texture.
  3. Line a 4-inch mousse mold with parchment paper to prevent sticking. Pour the matcha chocolate mixture into the mold and spread it evenly. Place the mold in the fridge and freeze for 6-8 hours, or until set.
  4. In a saucepan, add water and heat until it reaches 45-50°C (113-122°F). In a double boiler pot, add the chocolate chips and unsalted butter. Stir until fully incorporated and smooth.
  5. Stir in the chopped peanuts into the chocolate mixture, mixing well.
  6. Once the matcha chocolate has set, carefully demold it. Pour the crispy chocolate mixture on top and smooth the surface with a spatula.
  7. Place the chocolate bar back in the fridge and let it cool for 30 minutes or until the top layer is set.

Notes

  • For a nut-free version, skip the chopped peanuts and top with dried fruit, shredded coconut, or crushed cookies instead.
  • Substitute the white chocolate with milk or dark chocolate for a different flavor profile.
  • For a vegan option, use dairy-free chocolate and replace the whipping cream with coconut or almond cream.
